Your Spit Braai Chef
Every booking includes a qualified chef who manages the fire for the full five to seven hour cook, bastes on the hour, rests the meat properly and carves to order at the station. The chef is the product; the spit is just hardware. Included in the R180 a head, with no separate chef fee and no call-out charge.

What a spit braai chef actually does
Spit roasting a whole lamb takes five to seven hours over coals. For that entire time somebody has to manage a fire that is constantly trying to get hotter or colder than you want it, baste on a schedule, move the coals as the meat renders, and judge doneness on a carcass that cooks unevenly from shoulder to leg. That is the job. It is not watching a machine turn.
Our chefs arrive four to five hours before your serving time and stay until the last plate is served. Between those two points they:
- Build and bank the fire — coals to one side, indirect heat, adjusted every twenty minutes or so as the wind shifts
- Baste on the hour with the marinade the meat was prepped in the night before
- Read the meat, not the clock — shoulder and leg finish at different times on the same animal
- Rest it properly before carving, which is where most DIY spits fall down
- Carve to order at the station so the last guest gets meat as hot as the first
Chef-run catering or spit braai hire?
We do both, and they suit different people. Spit braai hire is the equipment on its own: you collect or we drop off, and somebody at your event does the cooking. It is cheaper, and for a confident braaier with a free afternoon it is the right call.
Chef-run catering is the other end. Somebody who does this every weekend holds the fire for five to seven hours, so the host is not standing at the coals on the one day they wanted to be with their guests. The usual failure mode of a self-cooked spit is predictable — dry at the edges, pink at the bone, ninety minutes late — and that is what you are paying to remove.

Who our chefs are
Working cooks with commercial kitchen backgrounds who spit braai as their speciality, not casual staff hired per event. The same small group cooks every Spit Braai Pro booking, which is what makes the result repeatable. They arrive in clean whites, they do not drink at your event, and they clear the site before they leave.
One chef per spit. For headcounts over about 150 we bring a second spit and a second chef rather than stretching one fire — two smaller lambs cook better and faster than one enormous one.

Questions about the chef
Does the chef stay for the whole event?
Yes, through the cook and the service. Once the carving is done and the equipment is packed down, the chef leaves — usually an hour or so after serving.
Can the chef cook the sides too?
No. Sides come prepared and are held hot on site. The chef's attention stays on the fire, which is where it needs to be.
Do I need to feed the chef?
No. Our chefs bring their own food and water.
What happens if it rains?
The spit needs cover, not sunshine. A gazebo, carport or open garage is enough and we carry a shelter for the fire. Cape Town weather has not cancelled a cook yet.
