Spit braai catering for Cape Town weddings
A spit braai suits a wedding for a reason that has nothing to do with food fashion: it feeds a large number of people generously, at once, outdoors, without a commercial kitchen. On a wine estate or a farm with no kitchen on site, it is often the only way to serve 120 people something genuinely good.
Two ways to serve it
Carving station
The chef carves to order while guests come up. Relaxed, generous, and it keeps the meat hot to the last plate. Best for 80 guests and up.
Plated to table
Carved back of house and plated per table. More formal, needs more service staff, better for a seated reception under 100.
What we handle, and what your venue does
We bring the spit, the fire, the chef and the meat, and we cook on site from the afternoon. Your venue or coordinator handles tables, linen, crockery, glassware and front-of-house staff. We are the kitchen, not the whole reception.
Most Winelands and Helderberg venues already know how this works and will have a spot for the spit — usually far enough from the marquee that smoke isn't an issue but close enough to carry.
Timing on a wedding day
- Chef arrives roughly five hours before the meal
- Meat goes on immediately; the fire is at working temperature within the hour
- Guests smell it during the drinks reception, which does more for anticipation than any menu card
- Carving starts on your coordinator's cue, not on ours
Book early. Saturdays between October and March are the busiest wedding dates in the Cape and our chefs are one small team. Six weeks or more is sensible for a summer Saturday.
